Air-dried Beef - Round Shoulder

Premium quality dried round shoulder from Czech beef heifers and oxen

We produce dried round shoulder (bresaola) at Amase according to a recipe inspired by old Italian methods. We rub the round shoulder with a mixture of salt and spices, dominated by juniper, rosemary, and cinnamon. After three weeks, we rinse the meat with dry red wine. The wine washes the salt off the surface and lowers the pH (acidifying and disinfecting the meat), which also promotes fermentation. After natural drying, we place the shoulder in a beef casing (blind intestine). This natural casing, which has a thick wall, prevents so-called circling (too rapid drying of the surface and the formation of an impermeable layer, which would make the meat difficult to dry). Tie it tightly with string so that the casing adheres perfectly to the surface of the meat, and dry slowly for 2-3 months. Then remove the string and the dried casing, and the dried round shoulder is ready. Then we just slice it thinly for you so you can enjoy it anytime, anywhere!

Dried round shoulder is best enjoyed at room temperature, which brings out its delicate flavor and aroma of beef. It is an excellent accompaniment to wine, mature cheeses, and baked goods. You can serve it as a carpaccio-style appetizer with a little lemon, olive oil, and Parmesan shavings, or slice it into salads, sandwiches, and anywhere else you would enjoy adding dried ham.
