Washed Yellow Pacamara, Guatemala

Sweet and sour, entertaining, wild and elegant. Such is Yellow Pacamara. This coffee comes from the Finca Los Manantiales farm. Production is currently managed by a young, progressive producer named Ronald Pivaral, who came to present the coffee to us in person, so we spent the whole day cupping together.

caramel – milk chocolate – orange – yellow apple

The beans are medium roasted, for brewing both filtered coffee and espresso (omni roast).
Baristas from Ambiente selected this coffee in Guatemala.
Packed in a valve doypack and a fabric pouch printed with our custom motif.

Washed Yellow Pacamara, Guatemala

Why Guatemala?
Together with a team from the roaster Nordbeans, we – baristas from Ambiente – travelled to Guatemala with the aim of learning about the origin of our coffee and establishing personal relationships with its producers. While visiting the farms, we observed the entire process of cultivation and processing, learned a lot and tasted the first samples of coffees during the harvest. We thus selected exceptional lots with a specific story and origin.

The selection includes five coffees with different flavour profiles to delight the broadest possible range of select coffee lovers. Each of them comes with a cloth bag featuring a motif designed and drawn by Guatemalan artist Markos Fischer to specifically match the concept and the given coffee. All of the motifs are inspired by the charm of Guatemala.

For Washed Yellow Pacamara coffee, we chose a character called K'iche' K'at, who dances under the sun and moon, interweaving the duality of day and night, harvest and rest. With its dance, K'iche' K'at keeps the seasons in balance.

Brewing instructions:
You need water (ideally filtered), a scale, a stopwatch and freshly ground coffee.
Filter: We recommend brewing the coffee with a V60 or April brewer in the ratio of 6 g per 100 ml.  For example: 18 g of coffee – 300 ml of water at 93°C – time 2:45
Espresso: We recommend using a two-lever coffee maker. For example: 18 g of coffee – 40 g per cup – flow rate 25 seconds

However, there are as many recipes as there are baristas. The important thing is to find the one that you will enjoy.
